Slow bread, on purpose.
Every loaf starts two days before you see it. We mix with stone-milled flour, let the dough rest overnight in the cold, and shape everything by hand at four in the morning. It’s slower. You can taste it.
Pastry gets the same patience: butter folded in over three days, proofed until it practically floats. When something sells out, that’s it until tomorrow. We’d rather run out than cut corners.
